I am a big fan of waffles, they are an immensely fun breakfast food. For this week’s post, we are going to take a look at the work of celebrity chef, Emeril Lagasse! I remember growing up, watching Emeril Live, he has such a way of teaching people how to cook, and makes it fun at the same time.

I like this recipe because Emeril uses a technique named as the number one way to improve your waffles on fifteenspatulas.com:
The batter should have stiff egg whites folded into it. When you beat egg whites to stiff peaks, they hold in a TON of air (think about what’s going on with souffles). When you incorporate those airy egg whites into your batter, they make the waffles incredibly light instead of heavy and dense.
